Vegan/Veggie Chilli

Serves 4-6

Ingredients

Onions 2 chopped

Garlic 2 cloves crushed

Veggie stock cubes 2

4 sun dried tomatoes chopped

Can of chopped toms

1pt water (maybe a little more just to stop it from drying out)

Lentils 250g (I use green or puy)

Red Kidney beans 1 can drained

Olive oil

Sweet Potato 1 peeled and sliced very finely (Added for flavour rather than texture so dont worry if they dissolve)

Salt & Pepper

Cajun Spice mix 1 large tsp

Chilli peppers if you want extra spice (I like mine hot hot hot!)

Instructions

      1. Fry the onions in olive oil until softened then add the garlic and the sun dried toms
      2. Add the chopped toms, the lentils, kidney beans, sweet potato, stock cubes and water
      3. Give it a good stir, bring it to the boil and turn down to a simmer for about an hour. Occasionally going back to stir and to check it hasn’t boiled dry. If too much liquid disappears just add a bit more. Keep in mind that you want it to be thick and not watery by the end. (If its a little watery just keep it cooking until it reduces)
      4. About 5 minutes before serving add the seasoning and spices. Make sure you try it, to see if its hot enough. We have 3 different levels of hot in our house. First lot of chilli for the 3 and 5 year old, second lot for my 7 year old and third lot for 16 yr old, me and hubby!
      5. Goes great with Guacamole – chopped avocado, chopped toms and extra chilli if you like – all mixed up! VEGAN YUM ATTACK!

Looks like a great recipe. When I make mine, I add a big spoon full of all natural peanut butter. It melts in and gives a slightly sweet and nutty taste to compliment the tons of hotness I use. It also has a thickening effect.

I have peanut butter days when I do that too! It also makes it slightly richer! Yummy x

Has it been since August 08?I went vegan last October and relate a lot to the things that you say. Thankfully, I didn’t become vegan because I was ill.
